You can check when words were officially added to the Italian vocabulary as far back as the first official lexicon, published in 1612, by visiting the Web site of Accademia Della Crusca. The organization is the braintrust for the Italian language, and it happens to be based in Firenze.
Io ho cercato la parola 'scherzare' perche è una bella parola, e descrive un attività che è proprio fundamentale ad ogni giorno trascorso in Italia (se lo vuoi proprio sapere, fu la prima parola che ho imparato in Italia). According to the Crusca folks, 'scherzare' was an official Italian word as far back as 1612. Here's the definition for the word given by the first vocabolario:
"Proprio lo scorrazzare, saltabellare, gridare, o percuotersi leggiermente, che per giuoco fanno i fanciulli, e gli animali giovani."
